{"id":1411,"date":"2013-01-28T08:42:55","date_gmt":"2013-01-28T14:42:55","guid":{"rendered":"http:\/\/www.pkenagy.com\/blog\/?p=1411"},"modified":"2013-01-28T08:42:55","modified_gmt":"2013-01-28T14:42:55","slug":"chipotle-lime-chicken-tacos","status":"publish","type":"post","link":"https:\/\/www.pkenagy.com\/blog\/chipotle-lime-chicken-tacos\/","title":{"rendered":"Chipotle-Lime Chicken Tacos"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<ul>\n<li itemprop=\"ingredients\">1 bone-in, skin-on whole chicken, rinsed and dried<\/li>\n<li itemprop=\"ingredients\">Kosher salt and freshly cracked black pepper<\/li>\n<li itemprop=\"ingredients\">1 lime, zested and juiced (lime\u00a0halves reserved), plus 1 lime, zested,<\/li>\n<li itemprop=\"ingredients\">1\/4 cup water<\/li>\n<li itemprop=\"ingredients\">1 cup crema<\/li>\n<li itemprop=\"ingredients\">2 chipotle chiles in\u00a0adobo sauce, finely minced into a paste<\/li>\n<li itemprop=\"ingredients\">8 (6-inch)\u00a0corn tortillas, warmed<\/li>\n<\/ul>\n<h2>Directions<\/h2>\n<div itemprop=\"recipeInstructions\">\n<p>Preheat the oven to 400 degrees F.<\/p>\n<p>Generously season the\u00a0chicken, on the outside and inside of the cavity, with salt and pepper, to taste. \u00a0With your fingers, put some of the lime\u00a0zest\u00a0under the skin of the chicken. \u00a0Sprinkle the lime juice over the chicken and put the halves into the cavity. \u00a0Put the chicken in a roasting pan, breast side up, and add 1\/4 cup of water to the bottom of the pan. \u00a0Roast\u00a0the chicken until the internal temperature registers 165 degrees F on an instant-read thermometer, when inserted in the thickest part of the thigh.<\/p>\n<p>Remove the chicken from the oven to a carving board, let sit until cool enough to handle.<\/p>\n<p>In a small bowl, combine the\u00a0crema, minced chipotles, remaining lime zest, and salt and pepper, to taste.<\/p>\n<p>Once the chicken has cooled, pull the meat from bones and\u00a0shred.<\/p>\n<p>Put some of the shredded chicken on each tortilla, top with chipotle crema and\u00a0garnish\u00a0with some zest from the remaining lime. \u00a0Serve with lime wedges.<\/p>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Ingredients 1 bone-in, skin-on whole chicken, rinsed and dried Kosher salt and freshly cracked black pepper 1 lime, zested and juiced (lime\u00a0halves reserved), plus 1 lime, zested, 1\/4 cup water 1 cup crema 2 chipotle chiles in\u00a0adobo sauce, finely minced into a paste 8 (6-inch)\u00a0corn tortillas, warmed Directions Preheat the oven to 400 degrees F.
