{"id":3012,"date":"2017-01-16T10:47:03","date_gmt":"2017-01-16T18:47:03","guid":{"rendered":"http:\/\/www.pkenagy.com\/blog\/?p=3012"},"modified":"2017-01-16T10:47:03","modified_gmt":"2017-01-16T18:47:03","slug":"low-cal-fettuccine-alfredo","status":"publish","type":"post","link":"https:\/\/www.pkenagy.com\/blog\/low-cal-fettuccine-alfredo\/","title":{"rendered":"Low-Cal Fettuccine Alfredo"},"content":{"rendered":"<p>From the Food Network, one of my go-to sources. \u00a0I added some crab I had leftover from my recent crabbing trip, it was pretty darn good.<\/p>\n<p>4 servings<\/p>\n<p>Ingredients<\/p>\n<p>1 tablespoon unsalted butter<br \/>\n1 clove garlic, minced<br \/>\n1 teaspoon grated lemon zest<br \/>\n2 teaspoons all-purpose flour<br \/>\n1 cup low-fat (2%) milk<br \/>\nKosher salt<br \/>\n2 tablespoons Neufchtel or low-fat cream cheese<br \/>\n3\/4 cup grated parmesan cheese, plus more for topping<br \/>\n3 tablespoons chopped fresh parsley<br \/>\n12 ounces fresh fettuccine<br \/>\nFreshly ground pepper<br \/>\nDirections<\/p>\n<p>Make the sauce: Melt the butter in a skillet over medium heat. Add the garlic and lemon zest and cook until the garlic is slightly soft, about 1 minute. Add in the flour and cook, stirring with a wooden spoon,1 minute. Whisk in the milk and 3\/4 teaspoon salt and cook, whisking constantly, until just thickened, about 3 minutes. Add the Neufchatel and parmesan cheese; whisk until melted, about 1 minute. Stir in the chopped parsley.<br \/>\nMeanwhile, bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, 2 to 3 minutes. Reserve 1 cup cooking water, then drain the pasta and return to the pot.<br \/>\nAdd the sauce and 1\/2 cup of the reserved cooking water to the pasta and gently toss to combine, adding more cooking water as needed to loosen. Season with salt.
