{"id":387,"date":"2009-03-29T09:59:52","date_gmt":"2009-03-29T15:59:52","guid":{"rendered":"http:\/\/www.pkenagy.com\/blog\/?p=387"},"modified":"2017-01-16T11:00:05","modified_gmt":"2017-01-16T19:00:05","slug":"barbecue-gumbo","status":"publish","type":"post","link":"https:\/\/www.pkenagy.com\/blog\/barbecue-gumbo\/","title":{"rendered":"Barbecue Gumbo"},"content":{"rendered":"<ul>\n<li>1 whole chicken (about 6 pounds)<\/li>\n<li>8 cups water<\/li>\n<li>2 medium size yellow onions, quartered<\/li>\n<li>2 ribs celery, each cut into 6 pieces<\/li>\n<li>2 bay leaves<\/li>\n<li>1 T. plus 1 1\/2 t. salt<\/li>\n<li>1 1\/2 t. cayenne<\/li>\n<\/ul>\n<ul>\n<li>1 1\/2 c. vegetable oil<\/li>\n<li>1 1\/2 c. bleached all-purpose flour<\/li>\n<li>2 c. chopped yellow onions<\/li>\n<li>1 c. chopped bell peppers<\/li>\n<li>1 c. chopped celery<\/li>\n<li>1\/2 lb. andouille or other smoked sausage, finely chopped<\/li>\n<li>1 lb. andouille or other smoked sausage, sliced<\/li>\n<li>4 lbs. barbecued meat scraps<\/li>\n<li>1 28 oz. cans crushed tomatoes<\/li>\n<li>8 oz. frozen cut okra<\/li>\n<\/ul>\n<p>1.\u00a0 Put the hen, water, quartered onions, celery pieces, bay leaves, 1 tablespoon of salt and 1 teaspoon of the cayenne in a large, heavy pot.\u00a0 Bring to a boil over high heat, then reduce the heat to medium and cook, partially covered, until the hen is tender, about 2 hours.\u00a0 Remove the hen, strain and reserve the broth.<\/p>\n<p>2.\u00a0 In a large, heavy pot or a Dutch oven over medium heat, combine the oil and flour.\u00a0 Stirring slowly and constantly, make a dark brown roux, the color of chocolate, 20 to 25 minutes.\u00a0 Add the chopped onions, bell peppers and chopped sausage.\u00a0 Cook, stirring, until the vegetables are very soft, 8 to 10 minutes.\u00a0 Add the reserved broth and tomatoes.\u00a0 Stir until the roux mixture and broth are well combined.\u00a0 Bring to a boil, then reduce the heart to medium-low and cook, uncovered, stirring occasionally, for 1 1\/2 hours.<\/p>\n<p>3.\u00a0 Meanwhile, remove the skin from the hen and pick the meat off the bones, discarding the skin and bones.\u00a0 Coarsely chop the chicken meat.\u00a0 Add the chicken, sliced sausage, bbq meat and the okra to the gumbo.\u00a0 Cook for 15 minutes.\u00a0 Remove from the heat and let sit for 5 minutes before skimming off the fat that has risen to the surface.<\/p>\n<p>4.\u00a0 Serve over rice.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>1 whole chicken (about 6 pounds) 8 cups water 2 medium size yellow onions, quartered 2 ribs celery, each cut into 6 pieces 2 bay leaves 1 T. plus 1 1\/2 t. salt 1 1\/2 t. cayenne 1 1\/2 c. vegetable oil 1 1\/2 c. bleached all-purpose flour 2 c. chopped yellow onions 1 c.
